Their father was one of the pioneers in oyster farming in Lower Normandy, Michel with his son Xavier and Thierry Hélie perpetuate the family know-how at Saint-Vaast-La-Hougue, on the eastern coast of the Cotentin region, one of the most famous oyster farming basins in France. The Hélie oysters produced at Saint-Vaast benefit from the Mother Nature’s generosity and acquire a high quality taste recognised by the finest gourmets.
Their characteristics, in addition to the slight traditional hazelnut taste, are a crisp meat accompanied by a mild salty flavour enhanced by marine and refreshing length in the mouth.
